I've been hovering over my computer at the office all morning, but not a lot of actual work is getting done because it's Prime Day (!) and I've got some serious shopping to do... I'm kind of all over the place in what I look for because there's so much variety in the Prime Day deals, but one I'm always watching for is on kitchen gadgets. This year, Prime Day includes one kitchen gadget I love and use all the time--the Instant Pot--and one that I've been coveting: a Vitamix blender. Both are on sale now*.

This is one kitchen appliance I still don't have, but I think today is the day I remedy that... My reluctance to buy one has been price--will I really use it enough to justify the cost? Instant Pot DUO60 6 Qt 7-in-1
I have this exact Instant Pot, and I love it. One of the great things about it, besides ease of use and speedy meals, is that there are so many cookbooks out now just for Instant Pot cooking. It's opened up a world of possibilities beyond the little recipe insert that comes with the unit, and the cookbooks below are two of my favorites.
Melissa Clark brings her considerable expertise to bear on a cookbook for Instant Pot users, based on a New York Times article she wrote about her own experience buying and using one. Great variety, including paleo and vegan options, Clark's recipes include Coconut Cheesecake, Osso Buco, and Spanish Garlicky Squid + Chorizo. If you have an Instant Pot, you'll want this cookbook.
